Last night one of my best friends, Morgan, came over for dinner. We have recently started cooking meals together and always seems to create something delicious! Last night's meal was amazing, and the best part was we stumbled on it by using ingredients we already had. After about thirty minutes of catching up over the stove, we grabbed our food and brought it down to my balcony to drink some strawberry sangria and watch the sun set! Perfect night.
Our lovely meal:
What you need:
- Chicken breast
- About a cup of corn
- 1 cup of rice
-1 can of black beans
-Half an onion
-1 Lemon
-1 can of salsa of your choice
- Olive Oil
- Butter
- 2 cups of water
What to do:
1. Rub butter and olive oil over the chicken breast and place in oven at 350 for 30 minutes
2. Pour the can of salsa into a pan and let simmer
3. Once the salsa comes to a boil add the corn
4. Squeeze 1 lemon's juice into the mixture
5. Shred the chicken and add the the simmering mixture
5. Add beans to the mixture
let sit at a simmer while you make the rice...
How to make the rice:
1. Messure 1 cup of rice
2. Measure 2 cups of water
3. Mix and let boil until the water is gone
Pour the delicious mixture over the rice and serve.

Pour a bottle of Skinny Girl Sangria in with whatever fruit you like, we opted for Strawberries (it makes it taste better, if that is possible):
Then we decided to make some sugar cookies with Rollos for dessert. Random choice, but it was pretty delish as well.
Overall, not a bad evening. The weather was great and it is always fun to catch up with friends. I'm going to try to cook one amazing meal each week with random ingredients I have in my kitchen and post the recipes....Hopefully I can follow through with this because so far the past two meals Morgan and I have whipped up have been very easy, quick, inexpensive, and tasty! Can't wait to share more!
